Carbohydrate metabolism is a fundamental biochemical process that ensures a constant supply of energy to living cells. The most important carbohydrate is glucose, which is the preferred fuel for the brain. Sugars are the mono- and disaccharides. Lactose it is a key nutrient in human and mammalian milk and has more favorable health impact compared to other sugars (glucose, sucrose, fructose). Carbohydrates are part of a balanced diet, but like any macronutrient, carbohydrates, and sugars in particular, should not be consumed in amounts that interfere with satisfying the requirements for adequacy of all other essential nutrients.
